Dynamic temperature data of water during a state change

This video illustrates the variation in temperature when liquid water becomes ice. As the temperature goes down from 25 to 0 degrees, the liquid water starts to freeze, and the temperature doesn't vary until all the liquid water has transformed into ice.

When all liquid water has been transformed into ice, the temperature decreases again from 0 to -5 C.
